Chocolate began for our chef not as a business but as a refuge a quiet ritual after service when a single spoonful could steady a restless mind. Over years that private comfort became a curiosity: why does one chocolate feel like velvet and another like dust? Where does that whisper of fruit or smoke come from? The questions sent him searching.

A few years of restless curiosity took him to Italy and Japan to study cooking and confectionery techniques. In Italy he learned patience: slow infusions, balance between fat and cream, and how terroir whispers through a single bite. In Japan he learned precision: restraint in sweetness, reverence for fresh ingredients, and the quiet ceremony around a perfectly made nama. It was in a small Tokyo shop, tasting a freshly made Nama, that everything clicked the way temperature, cream and chocolate meet to become almost silk.

Back home he treated nama as a craft and a promise. He matched beans by origin, adjusted cream ratios until the texture sang, and designed a cold-chain ritual so the box you open tastes like the chef’s first spoonful. Chef’s Nama is made in small batches, each piece an invitation to slow down: one signature flavor, one single-origin note, one hand-signed card. It is comfort refined honest, deliberate, and meant to be shared.

The chef now lives and runs business in the Philippines with his wife. While building their life here, they want to bring this quiet mindful pause of Nama to local tables to introduce freshly made, chef-crafted chocolate that honors origin and season, and to create small moments of calm people can share with family and friends.
